Having worked in some of the most prestigious kitchens around the world for almost two decades, you’d never guess that Analiese Gregory was put off from a career in food quite early on thanks to a prestigious award received by her father, Mark Gregory – the first New Zealander to receive the Meilleur Ouvrier de France.

Her family history soon took over, however, and she began to build a CV with experience from the likes of The Ledbury in London, Le Meurice in Paris, Quay in Sydney and Bras in the Aubrac, France.

After a stint with Mitch Orr at ACME, she founded Bar Brosé in Darlinghurst, a homage to Michel Bras, where she showcases “loosely French” food with influences from Chinese, Spanish and Moroccan cuisines.
