Restaurant Orana’s Jock Zonfrillo will fire up the Tasting Australia flames with Christian Puglisi (#39 in World’s 50 Best Restaurants, Relea in Copenhagen), Dan Hunter (#44 in World’s 50 Best Restaurants, Brae in Victoria) and Aaron Turner (The Age Regional Restaurant of the Year, Igni in Geelong) for an unforgettable experience.
These men are maestros of exploration, experimentation and elevating the natural beauty of the underestimated ingredients found in local surrounds. They also love to play with fire.
Puglisi – a natural born chef – cut his teeth at Noma in his adopted home of Copenhagen before opening Relae in 2010. Now, with one Michelin star to his name, Puglisi continues to push the boundaries and pursue sustainable, ethical practices within the industry
Thousands of kilometres away, Zonfrillo is chasing a similar dream through the Orana Foundation, educating, researching and empowering indigenous communities about the harvest and commercialization of traditional Australian ingredients.
Hunter was Chef of the Year in both The Age Good Food Guide and Gourmet Traveller in 2016 and respects nature and seasonality, while Turner is embracing regional life and supporting small local producers for a sense of place for his diners.
