Hansol Lee dedicated more than a decade to the kitchens of famed Japanese restaurant Kenzan, honing his skills in all culinary disciplines. Having trained with old-school masters of the trade while also drawing inspiration from contemporary culinary trends, Lee now applies his extensive knowledge of craft to serve authentic kaiseki-style cuisine. 

In March 2023 Lee embarked on an exciting new chapter by introducing Matsu to Melbourne’s west side, offering a mere four seats to diners. At Matsu, he not only creates remarkable dishes but also fosters intimate connections with diners, providing a unique and unforgettable dining experience.  

Matsu has achieved recognition by being listed as a finalist in the Good Food Guide New Restaurant of the Year for 2023.
