Stacey worked for over 15 years as a Sommelier and Wine Buyer in fine dining spaces across Melbourne (Taxi Dining Room, Rockpool Bar & Grill), London (The River Café), Daylesford (Lake House) and Geelong (Igni). In 2014 Edwards was awarded the Judy Hirst Award for the Sommelier responsible for the Best Wine List in Australia by Gourmet Traveller Wine Magazine.
