You want lavish? Let’s do it. We’re channelling big-city steakhouses for one night only – and we’ve assembled a dream team of chefs ready to craft their magic.

Matt Moran and Jake Kellie first worked together as mentor and apprentice at Sydney’s Aria. Now, many moons later, they are reuniting exclusively for Tasting Australia. Both are inspired by the power of an open flame, and by produce at its peak.

Moran is a star, one with awards, television shows, cookbooks and 11 hospitality ventures to his name. A passion for restaurants and the farms that supply them – including his own family property in New South Wales – runs deep. Aria remains a fine dining beacon, with other standouts from Moran’s portfolio including fellow Sydney venues Chiswick, Chophouse and North Bondi Fish.

Kellie, meanwhile, is best known for arkhé, the fire-driven Adelaide venue that helped usher the city into a new era of innovative dining. His trajectory has been sharp, with a pivotal stint at Singapore’s Michelin-starred Burnt Ends also among highlights to date. Drinks will be served by arkhé head sommelier Apex Lau, who studied and worked in Hong Kong before pursuing his passion for wine in Australia.  

Sydney’s Swillhouse hospitality group is home base for Whelan-Little – a role she took following stints at fellow city hotspot LP’s Quality Meats and Brat Restaurant in London. At every turn fresh produce, close ties with producers and an insistence on sustainability have been crucial.

It’s all about prime cuts, decadence and big, bold South Australian red wines as we conjure a steak night like no other. Indulge.

Our menus utilise regional produce at the height of its season and take months of careful planning. Many of the dishes featured will not be adaptable for particular dietary requirements. This event can cater to vegetarian, vegan and coeliac dietary requirements, although the menu may not be designed or executed by the visiting chefs.
